Speaking as a resident, lurking PrePress fellow - I would say - that your plan is just fine. I can tell you, though, that some (many) PrePress guys would just take your individual pages and copy and paste them into a new document the final size (even if they do not know the spine width at the time) rather than exporting as spreads. So ... as usual, check your proofs carefully. As for me ... I would just as soon get the text pages in that one file as well.
