As far as I know, Apple is _not_ dropping support for FW. They only dropped it on the MacBooks, thinking that those users would not need it and would mainly be USB users. It is still in all models except the MacBook and MacBook Air.
You might be thinking of Apple dropping support for the FW400 connection and just using the FW800 connection. For older drives, one just needs a $5 cable-adapter (or $30 at the Apple stores).
Generally, the only thing faster than FW800 would be a built-in eSATA connection, but I would expect those on the towers first.
