Oh. Good points. Nevermind for this maybe. I guess PDF printer does launch distiller in the background --"distillerIntf" shows in activity monitor, not dock -- is that distiller?? Distiller app launched by itself shows differently just -- "distiller" ... hmm.
So same rotating text in distiller issue, maybe?... whatever is causing that...
But PDF printer way cool for other things... It's there for me in tiger (but in tiger I have acro 8)... should be in the print dialog of all apps... very handy for apps that don't make their own Acrobat PDFs, no ps file to deal with (and seems speedier than making a ps). I use it for print booklet and instead of the clunkier plug-ins for Mac Word & Excel (also available under repair below).
In ID, 10.4 or 10.5, command-p and in the 2nd pull-down from the top of the Print dialog, where it says "Printer," you should find "Adobe PDF 9.0" waaay at the top of the printer list (you may have to scroll up or down in the pull-down to get to it). Then, you have to also click the "printer" button(!), and choose "Adobe PDF 9.0" there, click print, then name the pdf and save and pick the setting, then apple print button and then ID print button. Whew. But worth it if you need it.
If no "Adobe PDF 9.0", under printers, likely your Acrobat install is "damaged" (which happens sometimes, especially after updates).
If so, launch Acrobat and under Acrobat's Help menu at top choose "Repair Acrobat Installation..." , then be sure to check the option for "Adobe PDF Printer" ... and repair.
That should bring back your PDF printer.
And, for Snow people, it's hidden under Print dialog's "printer" button and then PDF button choose "Save as Adobe PDF" next to generic apple pdf, but rest is the same (though slower).

Bret, I have the full version of Acrobat Pro 9 installed on Tiger, there is no option to print to an "Adobe" PDF that I have ever found. I have seen such integration with MS Office on MS Windows, however it uses Distiller in the background rather than exporting direct to PDF.

I forgot to mention one other common product in my list of common PDF impo search terms: Inp02 by Dynagram.
I have used Quite Imposing and Inp02, both have their pros and cons. As a prepress service provider, having a PDF imposition application is of more benefit than having one only for use with InDesign.
