For changing case in apps that don't have it built in, I use a Mac service called "Word Service" which will, among other things, convert caps to lowercase and other combinations of upper and lowercase, and vice versa. You just select the text you want to convert, go to the Application menu (to the right of the Apple menu), select "Services>Convert>" and make your choice. I'm guessing it would probably work with Pages. I've primarily used it with Text Edit and MS Entourage. It's free:
